If you, like me, have got plums going soft in the fruit bowl or under your tree then here’s a super yummy and fast way to turn them into the most delightful dessert!

1 kg ripe black doris or red fleshed plums
1 c Waiheke Red Ruby Gin
¾ c brown sugar
½ t Himalayan pink salt
½ t cinnamon powder
3 bay leaves
Fill your pan with the whole plums. Sprinkle brown sugar and salt over the top, tuck in the bay leaves and drizzle the gin over the top.
Roast at 220°C for 20 - 25 minutes until the syrup in the bottom of the pan is thick and the plums are nicely roasted.
Dust with cinnamon and serve bubbling to the table with lashings of ice cream.
